Ciresa Gorgonzola DOP “Piccante” is characterized by its straw white color and by the typical intense gray-blue veins, called marbling . These are natural molds that develop during the maturation of the product and give it the typical spicy and decisive flavor.
Spicy Gorgonzola DOP is a compact and firm cheese, rich in aromas that develop during the minimum maturation period of 80 days , longer than that required for sweet Gorgonzola.
